Asparagus and Ham Roll Ups
16 fresh asparagus spears, trimmed
1 sweet red bell pepper, cut into 16 strips
8 oz. Havarti cheese, cut into 16 strips
8 thin slices of deli ham or prosciutto
16 whole chives
In a large skillet, bring 1” of water to a boil, add the trimmed asparagus spears And cover. Cook/steam for about 3 minutes…just until tender crisp. Drain and cool, patting dry. Cut the ham in half lengthwise. Place an asparagus spear on each piece of meat along with one piece of cheese and a pepper strip, too. Roll up, and tie with the chive. Chill until ready to serve with honey mustard for dipping if desired.
