Spicy Roasted Pumpkin Seeds
1 clove of garlic, cut up
1-2 Tablespoons of olive oil
2 teaspoons ground cumin
1 teaspoon paprika
½ teaspoon cayenne pepper
3/4 cup pumpkin seeds
1-2 teaspoons kosher salt
Cook garlic in oil over low heat for about 5 minutes, but do not let it get brown. Remove the garlic pieces and discard. To the oil add in the
cumin, paprika and the cayenne. Cook over low heat for about 1 minute until everything is fragrant. Place the seeds on a cookie sheet and put the spice mixture over the top, mixing well. Sprinkle with the salt and coat evenly. Spread into a single layer and bake at 300 degrees for about 5 minutes or until light browned. Seeds will pop a bit while baking.
Great on top of corn chowder!
