1 loaf French bread baguette
2 Tablsp olive oil
1 1/2 cups diced fresh strawberries
3/4 cup peeled diced peaches
1 1/2 teasp minced fresh mint leaves
1/2 cup mascarpone cheese
Cut baguette into 1/2" thick slices - place on ungreased
cookie sheet. Brush with olive oil, broil 6-8" from heat for
1 minute....just until lt. toasted.
In a small bowl, combine berries, peaches and mint.
Spread toasted bread slices with the cheese, top with
the berry mixture. Put under the broiler again for another
minute, just until the cheese starts to melt a bit.
Serve immediately!
