2 cups flour 1 1/2 teasp baking powder 1/2 teasp baking soda
1/2 teasp salt 1 Tablsp grated orange zest 1 1/2 cups fresh cranberries
1/2 cup chpd pecans (Opt) 1/4 cup butter or margarine 1 cup sugar
1 egg 3/4 cup orange juice Preheaat oven to 350, grease& flour 9x5 loaf pan
Whisk together flour, baking powder, soda and salt...stir in zest, berries and nuts.
Set aside. In a large bowl, cream butter, sugar and egg. Add in juice and blend well.
Beat in flour mixture just until moistened. Pour into pan, Bake for 1 hour or until bread
springs back when lightly touched. Let sit in pan for ten mins, then turn onto rack to
cool completely. Wrap in plastic wrap. Better the next day! Freezes well.
