3 cups flour 1 Tablsp baking powder 1 teasp grd cinnamon
3/4 cup granulated sugar one large egg 1 cup apple cider
1/3 cup vegetable oil OR unsweetened applesauce
1 apple, peeled/cored & chopped 28 oz. jar prepared mincemeat
Preheat oven to 400, line 18 muffin cups with paper liners, set aside.
In a large bowl, stir together flour, powder, cinnamon and sugar.
In another bowl, combine egg, cider and oil OR applesauce. Mix well,
then fold into the flour mixture until just combined.Fill the muffin cups
3/4 full. Bake for about 20 mins, or until muffins are risen and browned
and a toothpick inserted into the middle comes out clean. Cool for 10
mins. Glaze tops:
3/4 cup confectioners' sugar, 1/4 teasp cinnamon, 1 Tablsp apple cider
blend well, using a little more cider if needed to make a good runny glaze.
Spread a little on each muffin top.
IF YOU ARE GOING TO FREEZE THESE: do not glaze before freezing.
