2 cups flour 1/2 cup sugar 1 teasp baking powder 1/2 teasp baking soda
1/2 teasp salt 2 eggs 1/2 cup low fat buttermilk 1/4 cup canola oil
1 cup ripe bananas, mashed 1 cup frozen blueberries, OR 1 cup cherries
1/2 cup chopped walnuts - OPTIONAL preheat oven to 350
Place paper liners in a 12 cup muffin pan....set aside.
In a large bowl, mix dry ingredients. In a medium bowl, whisk together eggs, buttermilk
and the oil. Blend into the dry ingredients. Fold in fruit and nuts. Divide batter into
liners. Bake 20-25 mins. Cool and serve.
