3/4 cup butter, softened 1 cup + 2 Tablsp sugar 3/4 cup milk
2 eggs 1 3/4 cup white whole wheat flour 2 1/2 teasp baking powder
1/2 teasp salt 1 teasp vanilla 1 1/2 cups thawed, pitted 1/4'd cherries (sour)
Combine 2 Tablsp sugar with the cherries and set aside.
In a bowl, cream with an electric mixer the butter and 1 cup sugar. Add in the
milk and egg and blend until smooth. Add powder, vanilla and salt and blend well.
Add flour and stir until moistened. Add in fruit and juice. Fill 12 paper lined muffin
tins 3/4 full. Bake at 375 for 15 mins.
