1 1/2 cups cornmeal 1 heaping Tablsp flour 3 teasp salt
1/2 teasp baking soda 1 cup buttermilk
2/3 cup oil 2 beaten eggs 1 can creamed corn
2-3 jalapeno's chopped 4-5 green onions, chopped
1 1/2 cups cheddar cheese, grated
Combine cornmeal, flour, salt and soda. Add in:
milk, oil, eggs and corn and mix until combined, but do
not overmix. Fold in jalapeno's and onions.
Into a greased 9x13 pan, put half the batter, then half the cheese.
Repeat layers. Bake at 375 for 35 mins.
