Makes 2 loaves
3 cups sugar 15 oz can solid pack pumpkin
1 cup canola oil 4 eggs 2/3 cup water
3 1/2 cups flour 2 teasp baking soda 1 teasp salt
1 teasp grd cinnamon 1 teasp grd nutmeg
1/2 teasp grd cloves 1/2 cup chpd pecans
Beat sugar, pumpkin, oil, eggs and water until well blended.
combine the flour, soda, salt, cinnamon, nutmeg and cloves.
Gradually beat into the pumpkin mixture until well blended. Stir
in the pecans. Transfer to 9x5 loaf pans. For the topping:
combine:
1/3 cup flour, 1/4 cup pkd brn sugar
1/2 teasp grd cinnamon 2 Tablsp cold butter 1/4 cup chpd pecans
Mix well, fold in nuts last. Sprinkle over the two loaves.
Bake at 350 for 60 mins. Cool 10 mins in pan, then to wire racks
to cool completely.
can also add in:
1 1/2 cups coarse chpd cranberries
OR
1 cup mini semisweet chocolate chips
