7-7 1/2 C flour 3/4 C mashed potato flakes 2/3 C sugar 1 teasp salt
1/2 teasp grd. ginger 2 pkgs. active dry yeast 1/2 C water 1 C milk
1 C pineapple juice OR 8 oz. crushed pineapple with juice
1/2 C butter, softened 3 eggs, beaten 2 teasp vanilla
In a large bowl, combine 3 cups flours, potato flakes, sugar, salt, ginger and yeast.
In a saucepan, heat water, milk, pineapple and butter to 120-130 degrees. Add liquid
to dry ingredients and blend until moistened. Add eggs, beating until smooth. Add the
vanilla and mix thoroughly. Stir in enough remaining flour to form a soft dough. Turn onto
a floured surface and knead 6-8 times. Place in a very large greased bowl, turn onces to
coat with oil, cover and rise until dbld, about 1 hour. Punch down dough, divide into thirds,
and shape into 3 balls. Place each one in a greased 9" round cake pan. cover and rise
again 45 mins. Uncover, bake at 375 for 20-25 mins. Check bread while baking, cover
top with foil if too browned. Remove from pan and cool on rack. Makes 3 loaves.
