1 cup fat free (or low fat) milk 2 eggs, beaten
2 Tablsp oil (olive or canola) 1/3 cup pkd brown sugar
1 teasp grd cinnamon 1 1/2 cups old fashioned rolled oats
1 1/4 teasp baking powder 1/4 teasp salt
1/4 cup chpd nuts 1/4 cup dried cranberries, apricots OR cherries
1 fresh apple or pear, peeled, cored and diced
fresh blueberries for garnish
Preheat oven to 325, spray an 8" square baking dish with no-stick spray.
In a large bowl, combine all ingredients except the blueberries. Put into
the prepared baking dish, bake for 25 mins. Top should be lt. brown.
Spoon into serving bowls and top with blueberries or any fresh fruit!
Serves 6.
