2 Tablsp olive or canola oil                                        2 green onions, finely chopped

2 oz. Canadian bacon, cut into thin strips            1 pound of fresh asparagus, trimmed

1 clove of garlic, minced                                         1/4 teasp salt, 1/4 teasp black pepper

1 1/2 cups egg substitute                                    1 cup shredded cheese

Trim asparagus into 1" pieces.   Heat oil in a large non stick skillet over medium high heat.

Add the onions, bacon and asparagus and cook, stirring occasionally for 10 mins, or

until the asparagus is tender crisp.  Add the garlic, salt and peppeer and cook for

another minute.  Stir in the egg substitute and 3/4 cup of the cheese.  Cook, without stirring

for 5 mins more or until the bottom is lightly browned.  Top with the remaining cheese and

put until the broiler for a few minutes to finish cooking.

 

NOTE:  If your skillet is not heat proof, wrap the handle with foil to protect it.
