20 oz crushed pineapple with juice 1/2 cup sugar OR xylitol sweetner substitute
2 cups grated fresh carrots 2 Tablsp fresh grated ginger
1 Tablsp grated lemon zest
Bring all but the lemon zest to a boil in a saucepan, reduce heat and simmer
for 25-30 mins, stirring occasionally. Mixture should be the consistency of
applesauce. Take off heat and stir in the zest. Pour into sterilized jars
and cover tightly. Cool and refrigerate. Will last up to 1 month, chilled.
