1 baking apple, (Honeycrisp or Golden Delicious) 1 Tablsp walnut pieces
2 teasp dried tart cherries or raisins or dried cranberries 1/4 teasp cinnamon
1 teasp brown sugar pinch of orange OR lemon zest 2 teasp rolled oats
1/2 teasp unsalted butter 1/2 cup apple cider OR orange juice
Preheat oven to 375. Peel the skin off the top third of the apple, use a small
melon baller to scoop out the stem and core to make a shallow 2" wide crater in the top of
the apple to hold the oatmeal topping. Put the apple upright in a small baking dish.
Combine walnuts, cherries, cinnamon, brn sugar and zest. Stuff the apple with half of
this mixture, using all of the cherries. Add the oatmeal and butter and work it all together
spoon on top and press down into the apple. Pour the cider into the dish, cover loosely
with foil. Bake for 30 mins, then uncover and bake another 20 mins. Serve warm or cold.
