3/4 pound Canadian bacon, diced 6 English muffins, split and cut into 1" pieces
8 large eggs 2 cups milk 1 teaspoon onion powder 1/4 teasp paprika
4 egg yolks 1/2 cup heavy whipping cream 2 Tablsp lemon juice 1 teasp dijon mustard
1/2 cup butter, melted
Place half of the bacon in a sprayed 9x13 dish, top with muffin pieces, then the rest of the bacon.
In a large bowl, combine eggs, milk and onion powder. Pour over the top, cover and chill overnight.
Remove from the refrigeator 30 mins before baking.....sprinkle with paprika, cover and bake at
375 for 35 minutes or until a knife inserted in the center comes out clean.
In the top of a dbl boiler, cook egg yolks, cream, lemon juice and mustard until it reaches
160 degrees or thick enough to coat the back of a metal spoon. Reduce heat to low, slowly drizzle
in the melted butter and heat through. Serve immediately with sauce. Enjoy!
