Bacon Breakfast Muffins
2 slices of bacon, fried crisp, crumbled 1 Tablespoon sugar
1 cup milk 1 beaten egg
1 cup flour ½ teaspoon salt
4 teaspoons baking powder 1 cup corn meal
Combine cooled bacon, sugar, milk and egg and mix well. Sift flour with salt and baking powder. Add in cornmeal…then add in the first mixture and stir just until moistened. Fill greased or paper lined muffin tins until 2/3 full. Bake at 400 degrees for 20-25 minutes. Makes one dozen.
