Sour Cream Mock Puff Pastry:
1 cup unsalted butter, cut into 12 chunks 2 cups all purpose flour
1/2 teasp salt 1 cup sour cream
Filling:
6-8 cups apples, peeled/cored/thin slilced - suggest Cortland & Golden Delicious
1 cup fresh or frozen cranberries, coarse chopped or ground up in food processor
1 cup sugar 1/4 teasp cinnamon 2 Tablsp flour
1/2 cup raisins, plumped in water, drained well
1/3 cup melted unsalted butter - as required in recipe
confectioner's sugar When ready: oven to 375 - line a large sheet pan with parchment paper
Place prepared apples in a big bowl, toss with sugar, cranberries, flour and raisins...set aside.
In the bowl of a food processor, place flour and salt for pastry. As machine runs, drop in
the butter and pulse to create a grainy mix. Add sour cream and process only until a ball
forms. Remove from machine and pat and shape into a dough on a lightly floured surface.
Divide in half and wrap in plastic. Chill one one or up to freezing 6 months!
On a floured board, roll out one portion to a thin piece, 18"x22". Smear with half the butter.
At the end of the dough closest to you, spread out half the filling. Hoist the dough up and over the fruit
and roll gently to make a log. Place on baking sheet. Repeat with the other half. Brush both with remaining
butter. Make small slits in tops and dust with conf. sugar.
Bake at 375 for 35-40 mins. Cool, and dust again with sugar.
Using a serrated knife, cut on the diagonal to serve.
