1 cup milk       2 teasp baking soda     1 Tablsp grd ginger

1/2 cup butter      1/2 cup pkd brown sugar     1 cup corn syrup

2 cups flour     1 egg, beaten     zest of one lemon

In a small saucepan, warm the milk and remove from heat.....stir in

the soda and stir until dissolved.  In a large saucpean, melt the butter

and add sugar and blend well.  Add milk mixture and the egg and zest to combine thoroughly.  Transfer to a greased slow cooker.  Place two

clean tea towels (Folded in half) over the top of the crock, then put the lid on.

These towels will catch the moisture that will form while cooking on high

for 2-3 hours.  Test with a pick in the center of the bread to see when it is

done.  Serve with a butterscotch sauce or fresh whipped cream.
