10-12 egg whites, at room temperature

1 1/4 cups powdered sugar          1 cup flour

1 1/2 teasp cream of tartar

1 1/2 teasp vanilla      1/4 teasp salt      1 cup granulated sugar

Preheat oven to 350.   Sift powdered sugar and flour together 3x.

To the egg whites, add cream of tartar, vanilla and salt.  Beat on high

speed with electric mixer, gradually add in the granulated sugar,

until dissolved and stiff peaks form.   fold in the flour mixture a little

at a time.  Gently spoon the batter into an ungreased angel food tube pan.

Run a knife through the batter to release any air bubbles.  Bake for

40 mins.  Cake will spring back when lightly touched.  Take out of

oven and immediately invert.  Cool completely before removing from

pan.
