From: Carol of Defiance
2.9 oz. lemon pudding & pie filling mix (not instant)
½ cup sugar baked 9” pie shell
1 teaspoon grated lime peel
3 Tablsp lime juice
1 cup white vanilla chips
2 egg yolks
8 oz. cream cheese, softened
2 cups water
6 Tablsp sour cream
Combine pudding powder, sugar, lime juice and egg yolks. Stir in water. Cook and Stir over medium heat until the mixture comes to a boil. Remove from heat, add in the peel. In a small bowl, combine chips and ½ cup of this hot mixture and blend until melted. In  Another bowl, beat cream cheese until smooth, add chip mixture and blend well, spread into A baked 9” pie shell. Stir sour cream into the remaining pie filling mixture and blend well. Spoon over the cream cheese layer. Chill
.
When ready to serve, dollop with whipped Cream and lime slices and streusel topping:
¼ cup flour
4 teasp margarine
¼ cup sugar
¼ cup coconut:
Spread on a baking pan, bake at 350 for 4-8 minutes until browned, cool completely.
