Hawaiian Sweet Bread

7-7 ½ cups flour
¾ cup mashed potato flakes
2/3 cup sugar
2 pkgs active dry yeast 1 teaspoon salt
½ teasp ground ginger
1 cup milk
½ cup water
½ cup butter, softened
3 large eggs
1 cup pineapple juice OR 8 oz. crushed pineapple with juice
2 teaspoons vanilla
Combine 3 cups flour with flakes, sugar, yeast, salt and ginger. In a saucepan, heat milk, Water, butter and pineapple to 120-130 degrees. Add to dry ingredients and blend until moistened. Add eggs and beat until smooth. Add vanilla. Stir in enough of the remaining Flour to form a soft dough. Turn onto floured surface and knead for 6-8 minutes. Place in a greased bowl, turn once, cover and let rise in a warm place until dbld, about 1 hour. Punch dough down, divide into thirds and shape each into a ball. Place each in a grsd 9” round cake pan. Cover and let rise again for 45 mins. Bake at 375 for 20-25 mins. Cover with foil if it starts to get too browned. Makes 3 loaves!
