Boiled Frosting
From: Ruth of Findlay
In the top of a double boiler, OR over very low heat in a saucepan,
Mix:
2 egg whites
5 Tablespoons cold water
1/8 teaspoon salt
1/8 teaspoon cream of tartar
¾ cup granulated sugar
¾ teaspoon light Karo syrup small amount of color, optional
Beat well on high speed while cooking…until stiff peaks form. Dump into a large bowl, add in 1 teaspoon vanilla and continue to beat well until very fluffy. Enough for a three layer cake of a 9x13 cake.
