Pastry for 9” pie shell
3 eggs
1 cup light color corn syrup
1/3 cup each: granulated sugar, packed brown sugar, butter, melted
1 teaspoon vanilla
¼ teaspoon salt
1 cup semi-sweet chocolate chips
1 cup flaked coconut
1 cup coarsely chpd walnuts or pecans
In a bowl, combine eggs, syrup, sugars, butter, vanilla and salt. In the pastry shell, layer: the choc chips, then the coconut, then the nuts. Pour the egg mixture over the top. Cover the edge of the pie shell with foil, bake at 350 for 30 minutes, take off foil, bake another 20-25 minutes. Cool and refrigerate.
