Chocolate Chip Pumpkin Cupcakes
4 eggs
2 cups sugar
16 oz. can pumpkin
1 ½ cups oil OR unsweetened applesauce
Blend together well, add in:
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
Blend well, fold in 2 cups semi sweet chocolate chips. Pour into paper lined muffin tins 2/3 full. Bake at 400 for 16-20 minutes. No frosting necessary!
