Nantucket Cranberry Cake
2 cups chopped cranberries
½ cup chopped walnuts
½ cup granulated sugar
2 large eggs
¾ cup melted, cooled butter
1 cup granulated sugar
1 cup flour
¼ teaspoon salt
¼ teaspoon almond extract buttered 10” pie plate

Combine the chopped cranberries, walnuts and the ½ cup sugar….place in the pie plate. In a large bowl, combine the eggs, butter, 1 cup sugar, 1 cup flour, the salt and the extract. Stir until the batter is smooth, pour it over the cranberry mixture in the pie plate. Bake for 40 minutes at 350 degrees or until a tester comes out clean.
