2 1/4 cups grated carrots 1 3/4 cups chpd walnuts
1 1/2 cups chpd pineapple 1/4 cup lt. brown sugar
3 1/4 cups flour 1 3/4 cups sugar
2 1/4 teasp cinnamon 2 teasp baking powder
1/2 teasp baking soda dash of nutmeg
1 teasp salt 1 cup oil 4 eggs, beaten
1/3 cup butter, melted 2 teasp vanilla
Grease and flour 2 8" round cake pans. Preheat oven to 350.
Combine carrots, walnuts, pineapple and brn sugar....let sit for 30 mins.
In another bowl, stir together flour, sugar, cinnamon, powder, soda, nutmeg and salt. Add in
the oil, eggs, melted butter and vanilla. Beat on medium speed for 2 mins. Add in carrot
mixture and beat by hand until well mixed. Pour into pans. Bake for 45-50 mins, or until a
pick inserted comes out clean. Cool 10 mins, then turn cakes onto a rack to cool completely.
Frosting: Beat 1/2 cup butter until fluffy, add in 1/2 cup finely chpd pineapple with 2 cups
powdered sugar and 1/2 teasp vanilla. Beat until smooth.....add in 3 1/2 cups additional pwdr
sugar and 2 Tablsp pineapple juice. Beat until lt and fluffy....frost cakes.
