1 box Betty Crocker supermoist yellow cake mix
1 cup cold butter, cut into small pieces
1 1/2 cups sugar 3 eggs 4 cups sliced rhubarb
preheat oven to 350 reserve 2 Tablsp of cake mix.
In a large bowl, cut butter into remaining cake mix until crumbly.
In bottom of a 9x13 pan, press 2 1/4 cups of this crumble mixture to form
a crust. Bake for 15 mins. Remove from oven.
In a bowl, to the reserved 2 Tablsp of dry cake mix, add:
the sugar and the eggs and beat until creamy. Stir in the rhubarb and pour
over the partially baked crust.. Sprinkle the remaining crumbles over the top.
Bake an add'l 45-50 mins. Cool slightly before serving.
