4 egg whites, room temp. pinch of salt 1 cup sugar
2 teasp cornstarch 1 teasp white vinegar 1/2 teasp white vanilla
Preheat oven to 200. Place a sheet of parchment paper on a large cookie sheet.
Beat egg whites and salt until firm to the touch, gradually add in the sugar
and continue beating until the mix is very firm and forms stiff, shiny peaks.
Sprinkle with cornstarch, vinegar and vanilla and fold in with a spatula. Pile 6
spoonfuls of this meringue on the lined cookie sheet and spread into circles
or clouds. Smooth out to make a disk. Bake for 1 1/2 hours, turn off oven and
let in the oven for another hour. They will be crisp on the outside and soft on
the inside.
3 cups mixed berries and 1 1/2 Tablsp sugar
Combine and let sit for 20 mins.
1 cup heavy cream - beat well, adding 1 Tablsp sugar with mixer until
soft peaks form.
TO SERVE: Place a cloud on a serving plate, top with whipped cream,
then some of the berries.
