3 egg whites, room temp        1/2 teasp cream of tartar

10 Tablsp sugar       1 teasp clear vanilla extract

In a glass bowl, beat whites at high speed until frothy,

add tartar and beat until soft peaks form.  Grad add sugar,

1 Tablsp at a time.  Beat at high speed for 2-4 mins or until

stiff peaks form and sugar dissolves.   Add vanilla and blend

well.
