2 egg whites     1 1/2 cups sugar     1/2 teasp cream of tartar

1/2 cup cold water     dash of salt    1 teasp clear vanilla

Place all but vanilla in top of a dbl boiler NOT over heat.  Beat 1

minute with mixer....place over boiling water and cook, beating

constantly until frosting forms stiff peaks....about 7 mins.  don't overcook.

Remove from water, add vanilla and beat until spreading consistency,

about 2 mins.      frost cake!

VARIATIONS:     Peppermint stick:  After vanilla, tint with a couple drops of red color to

make a soft pink, sprinkle cake with crushed peppermint candy.

Cream Cheese Whip:  In a separate bowl, stir one 3 oz. cream cheese until soft, beat into it a small

amt of this frosting....then fold the cream cheese back into the remaining frosting.  Blend well.

Pineapple version:  Substitute syrup from canned pineapple for the water.  Omit vanilla and

add 1 teasp grated lemon peel.   Garnish frosted cake with pineapple cubes.
