Fresh Peach Pie First Place! Bluffton Relay - Pie Contest

Baked 9” pie shell
1 cup granulated sugar
2 Tablsp. white karo syrup
2 heaping Tablsp cornstarch
1 cup coldwater
3 ½ Tablsp peach gelatin powder*
1-2 drops yellow food color
5-6 medium peaches
In a saucepan, put the sugar, syrup, cornstarch and water. Stirring constantly cook to a boil, cook for another 5 minutes… continuing to stir. Add in gelatin powder (*This will be measured from a small box of gelatin.), add in the coloring. mix well, let cool. Peel, pit and slice the peaches, add into the mixture, put into the shell. Chill. Serve with Coolwhip.
