Salted Peanut Crisp Cookies

1 cup shortening                                 1 ½ cups packed brown sugar
2 large eggs, beaten                            2 teaspoons vanilla extract
3 cups flour                                         ½ teaspoon baking soda
1 teaspoon salt                                   2 cups salted peanuts

 

Preheat oven to 375.  Combine shortening, sugar, eggs and vanilla.  In another bowl, combine flour, soda and salt.  Add into the creamed mixture.  Add in the peanuts and blend well.  Drop by rounded teaspoonfuls onto a lightly greased cookie sheet two inches apart.  Flatten slightly with the bottom of a greased glass dipped in granulated sugar.  Bake 8-10 minutes, or until golden brown.  Makes six dozen cookies.
