Pound Cake
1 cup butter         2 Tablsp granulated sugar         2 ½ cups flours
¼ teaspoon salt   1 teasp baking powder              1¾ cups firm pkd brown sugar
4 large eggs         2 teasp vanilla extract              2/3 cup sour cream
Preheat oven to 325. Butter or spray a bundt pan and dust with 2 Tablsp sugar. In a large bowl, combine flour, salt and baking powder. With an electric mixer, cream butter and brown sugar on medium speed until light and fluffy. Beat in the eggs, one at a time until well mixed. Add in the vanilla. On low speed, blend in the sour cream alternately with the dry ingredients until combined. Spoon batter into prepared pan. Bake for 1 hour and 10-15 minutes. Cool in pan for 10 minutes, loosen edges and then turn onto a rack to cool completely. This cake seems to taste better as it ages for a couple of days. Store in an airtight container.
