4 egg whites - beaten stiff      box of golden poundcake mix

2/3 cup water

Blend well, beating with an electric mixer until well blended, about

2 minutes.  Put into cupcake tins sprayed with no stick spray.

Bake at 325 for 30 mins or until tests done.  Makes 12.

Filling: (THE most important part!!)

2 Tablsp butter     1/3 cup Crisco shortening

Cream together well, add in:

1 cup powdered sugar      1/4 cup granulated sugar

1/3 cup evaporated milk

Blend well, then add in:

1 teaspoon vanilla extract      2 drops of lemon extract

Mix well with electric mixer on medium speed until fluffy.

Take completely cooled cupcakes and using a toothpick hollow

out a spot from the bottom.  Fill with cream.  Chill.
