1 box white cake mix small box instant vanilla pudding powder
1 1/2 teasp grd cinnamon 1/4 teasp grd nutmeg
4 large eggs 3/4 cup orange juice
1/2 cup oil OR unsweet applesauce 3 cups peeled/grated carrots
3/4 cup raisins 1 Tablsp grated orange zest
In a large mixing bowl, combine dry cake mix, dry pudding powder, spices,
eggs, orange juice and oil (or applesauce). Beat with electric mixer on medium
speed for 2 minutes or until smooth. Add carrots, raisins and zest and blend
well. Spread batter into two 9" round cake pans (sprayed w/no stick spray)
or a 9x13 pan (sprayed). Bake at 350 for 35-40 mins until a pick inserted in
the center comes out clean. Cool on wire rack.
Frosting: 8 oz. cream cheese, softened 1/2 cup butter, softened
2 Tablsp orange juice 1 Tablsp grated orange zest
Blend well, then work in up to 3 1/2 cups powdered sugar.
Frost cakes as desired.
NOTE: For regular frosting: instead of orange items, use 1 teasp vanilla.
