Peanut Butter and Jelly Muffin
1 cup whole wheat flour                1 ½ teasp baking powder           1 teasp baking soda
½ teasp salt                                ½ cup brown sugar                   1 teasp cinnamon
6 Tablsp rolled oats                      3 Tablsp. Raisins                      ¼ cup chopped peanuts
½ cup milk                                  4 Tablsp. Applesauce                6 Tablsp maple syrup
1 teasp vanilla                              ½ cup peanut butter                  1 Tablsp cider vinegar
2 medium bananas, mashed 4 Tablsp strawberry jam
Preheat oven to 350 and line muffin tins with paper liners. Sift together flour, baking powder, baking soda, salt, brown sugar and cinnamon. Add the oats, raisins and half of the peanuts. In another bowl, combine the milk, oil, maple syrup, vanilla, peanut butter, vinegar and bananas and mash until the ingredients are well blended, then pour into the dry ingredients. Stir well. Fill muffin cups two thirds full then drop a little jam on each one and a few of the remaining peanuts. Bake for 25 minutes or until a toothpick comes out clean.
