Shredded Apple Cake
2 cups flour                                 1 teas baking soda                        ¼ teas salt 1 teas grated nutmeg
1 teas ground cinnamon               3 large eggs                                  ¾ cup lt. brown sugar, firmly packed
2/3 cup unseats. Applesauce        3 cups peeled, grated apples          ½ cup raisins
Preheat oven to 350. Combine flour, soda, salt and spices. Sift together and set aside. In a large bowl, whisk eggs together, add in the brown sugar and applesauce and blend well. Use a spatula to fold in half the grated apples, followed by the flour mixture, then fold in the remaining apples along with the raisins. Put the cake batter into a bunt pan sprayed with no stick spray, bake For 45-55 minutes or until a toothpick inserted comes out clean. Cool the cake in the pan for 10 minutes, and then flip onto a rack to cool completely.
