Pecan Pie Bars
1 box yellow cake mix ½ cup melted butter 1 egg, beaten
1 ½ cups chopped pecans ½ cup firm packed brown sugar 1 ½ cups dark corn syrup
1 teaspoon vanilla extract 3 eggs, beaten
Spray the bottom of a 9x13 pan, set aside. Empty box of cake mix into a large bowl. Measure
2/3 cup of the mix and set aside. Into the remaining mix add the butter and one egg. Mix until crumbly and press into the prepared pan as a crust. Bake at 350 for 15-20 minutes until light golden brown.
In the same bowl, combine the 2/3 cup reserved cake mix with the brown sugar, syrup, vanilla
and the eggs. Blend with an electric mixer on medium speed for two minutes until smooth.
Pour the filling over the partially baked crust. Sprinkle evenly with the pecans. Return to the
oven and bake another 30-35 minutes until the filling is set. Cool and cut into 24 bars.
