3 eggs 1 cup flour 1 teasp baking powder 1/4 teasp salt
3/4 cup fine diced fresh strawberries
1/4 cup frozen mixed berry juice concentrate, thawed
1/2 cup granulated sugar 3/4 cup fine chopped pecans
3 cups strawberry ice cream (can be low sugar/low fat)
Lt. grease 15x10x1 pan, line with waxed paper. In a small bowl,
combine flour, powder and salt - set aside. In a small sawucepan,
[combine berries and juice concentrate, heat to boiling, reduce heat to low. Cook, stirring
and mashing for about 4 mins, or until slightly thickened. Remove from heat and cool.
In a large bowl, beat eggs with electric mixer on high for about 5 mins or until thick and
lemon colored, gradually add sugar and strawberry mixture, beating until combined. Sprinkle
with flour mixture and gently fold in. Spread batter into prepared pan, sprinkle with nuts.
Bake at 375 for 12-15 mins. Turn cake onto a clean kitchen towel sprinkled with powdered
sugar. Remove wax paper. Roll up and cool completely. Unroll, spread with softened
ice cream, roll up with out towel. Trim ends, cover and freeze - serve!
