1/2 cup flour 1 large egg 3 Tablsp amaretto-flavored nondairy creamer
1/2 cup skim milk 1/8 teasp grd nutmeg 1 teasp vanilla cooking spray
Filling: 2 cups orange juice 2 Tablsp orange liquer 8 peaches, peeled, sliced thin
1 teasp honey 1 teasp cinnamon 1 teasp orange zest
Put flour in a mixing boel, make a well and put egg in center. While whisking, pour in the
creamer and milk and blend well until smooth and free of lumps. Add in nutmeg and vanilla.
Cover batter and sit for 30 mins. Preheat 8" nonstick crepe pan for about 1 minutes over
medium high heat. Spray with no stick spray, add in 3 Tablsp of batteer and tilt pan to spread
batter evenly. Cook for 1-2 minutes, then flip and cook other side. Conintue process for
8 crepes. For the filling: combine juice, liquer and peaches and honey in a medium frypan.
Cook ten mins until thickened and syrupy.
To assemble, lay a crepe on a plate and mound 1/3 cup of the peaches on the bottom
half, fold over and spoon some syrup over the top. Dust with cinnamon and zest.
