Pumpkin Cranberry Cake
½ cup chopped cranberries            ½ cup chopped walnuts
2 Tablespoons flour                        2 eggs
¼ cup butter or margarine              1 cup packed brown sugar
½ cup sifted flour                           1 teaspoon baking powder
¼ teaspoon baking soda                ½ teaspoon cinnamon
½ teaspoon nutmeg                       ¼ teaspoon ginger
1 teaspoon vanilla                          2/3 cup canned pumpkin
Combine cranberries, nuts and 2 Tablsp flour, set aside. Melt butter over low heat, blend in brown sugar and mix well. Remove from heat, add in pumpkin and vanilla and mix well. Cool slightly, then add in the eggs, one
at a time mixing well. Sift together the dry ingredients, add to the pumpkin mixture, and then stir in the nut mixture. Put into a greased or sprayed 9” baking dish. Bake at 350 for 20-25 minutes. Serve warm with whipped cream!
