3/4 cup canned pumpkin 1 cup pkd dark brown sugar
2 large eggs 1/4 cup lt. olive oil OR unsweet applesauce
2/3 cup whole wheat pastry flour
2/3 cup all purpose flour 1 teasp baking powder
1/4 teasp baking soda 1 1/2 teasp pumpkin pie spice
1/4 teasp salt 1/2 cup chpd walnuts 1/2 cup dried cranberries
Preheat oven to 350. Line cookie sheet with parchment paper.
In a medium bowl, whisk together the pumpkin, brn sugar, eggs
and oil. In a large bowl, combine flours, baking powder, baking
soda, spices and salt. Make a well in the center and stir in the
pumpkin mixture. Add the nuts and berries and blend well.
Drop dough by level Tablsp about 1 1/2" apart onto the prepared
sheet. Bake for 10 mins, cookies should be lt. brown and firm to
the touch. Remove to rack and cool completely.
