Apple Cider “Pie” From: Rosemarie of Tiffin
1 ½ cups apple cider ¾ cup packed brown sugar 2 Tablsp Minute tapioca
4 pounds tart cooking apples, peeled, cored & sliced thin
2 Tablsp lemon juice 2 Tablsp butter one pie shell
1 egg yolk 1 Tablsp water
Bring to a boil cider, sugar and tapioca until thickened, cook for 10 minutes. Sprinkle The apples with the lemon juice and then add into the cider mixture and blend well. Cook for another 5 minutes or until the apples are slightly tender. With a slotted spoon, Put apples in a sprayed casserole dish. Cook the remaining sauce down to ½ cup. Pour This mixture over the apples. Top with pie shell, flute and vent. Brush with egg mixture
And sprinkle with a little sugar. Bake at 375 for 40-45 minutes.
