10" graham cracker crust in springform pan, wrap in foil...place in hot water bath before baking

 

2 1/2 lbs cream cheese      5 oz sour cream     12 oz granulated sugar     2 oz cornstarch

5 eggs      2 egg yolks       2 teasp vanilla bean paste OR pure vanilla extract

with an electric mixer, combine cream cheese, sugar and the cornstarch.  Scrape the sides of

the bowl often, gradually add eggs, yolks and vanilla and blend well.  Add sour cream and mix

well, scrape bowl.  Pour batter into crust.  Place on baking sheet with hot water bath

and bake at 350 for 45-55 mins, cake should be set like jellp.  Remove and cool, the chill for 8 hrs.
