2 1/4 cups flour     3/4 cup pkd. dark brown sugar     2 1/2 teasp grd ginger

1 3/4 teasp baking soda      1 teasp grd cinnamon     1 teasp grd cardamom

1/2 teasp salt    2 eggs, room temp     1 cup dark cooking molasses

1/2 cup unsalted butter, melted/cooled      1/4 cup vegetable oil     3/4 cup boiling water

Preheat oven to 350     9" square metal pan - sprayed with no stick spray w/flour

In a large bowl, whisk together flour, brown sugar, ginger, baking soda, cinnamon

cardamom and the salt.   Add in the eggs, molasses, butter and oil and blend well.

Add in the water and stir - the batter will be thin.  Put into your prepared pan.

Bake for 55-60 mins or until a toothpick inserted in the center comes out clean.

Cool on a rack.  Serve at room temp with orange mascarpone cream:

2 Tablsp confectioners sugar      8 oz. mascarpone cheese, room temp*

3/4 cup whipping cream       2 teasp fine grated orange zest     1 Tablsp orange juice

Blend well - until soft peaks form.

* Could substitute cream cheese.
