pastry for 2 crust pie    

1 1/4 cups sugar                        1 1/2 Tablsp butter                    1 Tablsp lemon juice

1/4 teasp almond extract      3 Tablsp quick cook tapioca          4 cups tart cherries

Toss cherries with tapioca, sugar, lemon juice and extract.  Let sit for 10 mins.  Pour into

shell, dot with butter.  Cover with top crust, flute and vent.  Bake in preheat 450 oven for 10 mins.

Reduce heat to 350, bake another 40 mins.
