1 Tablsp butter 2 1/2 cups Plus 12 Tablsp cake flour
1 1/2 cups sugar 1 teasp baking soda 1 teasp cocoa powder
1 teasp salt 2 eggs 1 1/2 cups vegetable oil 1 teasp vanilla
1 cup buttermilk 2 Tablsp red food coloring 1 teasp white vinegar
Preheat oven to 350, butter (1 Tablsp) and dust three 8" round cake
pans (2 Tablsp flour)....set aside. Sift the remaining flour with sugar,
soda, cocoa and salt. Beat eggs, oil, buttermilk, color, vanilla and vinegar in a bowl with
electric mixer, add the dry ingredients and blend well. Pour into the prepared pans.
Bake 25-30 mins. Cool, then to a rack to cool completely. Frosting:
12 oz each: butter and cream cheese 1 1/2 teasp vanilla 3 cups confectioners sugar
Blend well - frost the three layer cake. You can top with chopped pecans if desired.
