2 cups brown sugar 4 cups presifted flour 1 cup butter 3 teasp baking powder
2 beaten eggs 1/2 teasp salt 1 cup cooled, strong coffee
1 cup chopped nuts 1 teasp pure vanilla Preheat oven to 400.
Cream sugar and butter, add eggs and vanilla and blend well. Add the dry ingredients
alternately with the coffee. Fold in the nuts. Batter with be soft. Drop by teaspoonfuls onto
cookie sheet. Bake until lt. brown, about 8-12 mins. Ice when cooled:
Penuche is pronounced: puh-noo-chee!
Melt 1/2 cup butter, making sure it doesn't brown. Add 1 cup packed brown sugar,
boil together over low heat for 2 mins. Stirring constantly for the time. Stir in 1/2 cup
whole milk, stir until mixture returns to a boil. Cool until lukewarm, frost cookies.
