4 oranges 4 1/4 cups water 2 1/2 cups sugar, plus more for coating
Use a knife to score peels of oranges into quarters. Peel carefully and set aside
the oranges for another use. Cut away the bitter white pith from the underside of
the peels....slice the peels into long thin strips, aprrox 1/2 " thick. Combine the
water and sugar in a medium saucepan over medium heat. Stir to dissolve and
heat uncovered until it boils for 5 mins. Add strips of peel and turn to low, until just
a simmer. Cook, uncovered and simmering until is reduces to a quarter of its
original colume. Do not stir during this process. It could take up to 2 hours!
Remove saucepan from heat and allow to cool. One cool, drain the peels in a
colander. Preheat oven to 200. Place one cup of sugar in a small bowl, dredge
the peels in the sugar until coats and place on a cookie sheet lined with parchment
paper. Add more sugar if needed. Place peels in the warm oven and allow to dry.
Make take one hour or more, but check every 20 mins or so. OR
let them sit on the counter, undisturbed overnight to dry out.
When completely dry, scrape off any excess sugar clumps. Store in a dry
location.
