1 pound butter 2 cups sugar 3 eggs 1 pound ricotta cheese
2 teasp vanilla 4 cups cake flour 1 teasp baking soda 1 teasp salt
Cream butter and sugar, beat in eggs, blend in cheese and vanilla and mix well.
Stir together the flour, soda and salt. Add to the creamed mixture and beat well. Drop batter
by Tablsp onto greased cookie sheet. Bake at 350 for 12 mins. Do not allow to brown.
Remove from sheets and cool completely. Ice cookies:
2 Tablsp butter, 2 cups confectioners sugar, sifted; 2 Tablsp milk.
blend well and beat until smooth....frost cooled cookies.
